Here's what I had:
I don't think I can completely express how much I LOVE zucchini! What you can't see in the picture is that there's spaghetti in there. I love taking some kind of pasta, cooking up a little zucchini, and putting it all together with sauce and some Parmesan cheese. Mmmmmm....
While I can get zucchini year-round, it just screams summer to me.

I love adding zucchini to spaghetti! My husband thinks its weird, but he can make his own dinner if he doesn't like it :)

Yum!!! Zucchini is so awesome. Arin's parents have a huge garden and they always harvest more zucchini than we know what to do with - I'm so excited to make zucchini brownies and zucchini bread and zucchini shish kabobs, so now I can try this recipe too : )
