Dinner Time Tuesday 8/13: Ribs (again)

Yesterday, I told you that Scott and I need to go grocery shopping.  We had just a few things left, and these ribs were one of them.  So it was ribs, mashed potatoes, and corn for us.

Dinner Time Tuesday 7/23

Here's what I had for dinner:


We hadn't bought Steak-Eze in a while, so the last time we went grocery shopping, we bought a package.  I really do love these cheese steak sandwiches.  I also made my potato casserole and corn on the cob to go with it.  SO yummy!

Dinner Time Tuesday: Salsa Chicken


Hey y'all!  It's Dinner Time Tuesday.  I'm super excited to share this delicious recipe with you today!  I used my Bean Pot for this.  Have you joined my Blog Party yet?  You can get yourself a Bean Pot (and maybe even win one)!

This recipe is so easy and so yummy.  You're going to love it!

Salsa Chicken
Ingredients
  • 1-2 lbs. chicken breast tenders*
  • 1 can rinsed black beans
  • 2 c. chunky salsa
  • 1 bag frozen corn (10-12 oz.)
*Or 6-9 chicken thighs or drumsticks (use 1 to 1 1/2 c. salsa)

1. Put your chicken in the Bean Pot.  (Chicken CAN be frozen)
2. Top with black beans, salsa, and corn.
3.  Cook at 300* for 6-7 hours.**

**Cooking times can vary greatly.  One variable is if your chicken is thawed or frozen.  I thawed my chicken a bit in the microwave, but parts were still frozen.  The original suggestions for cooking were 250* for 6-9 hours or 350* for 4-5.  Mine was just a little overcooked, but it was still super yummy.  Mine ended up cooking for 7 hours at 300*.

 
The chicken is super tender and juicy.  It pulled apart really easily, which isn't necessary, but it was a bonus!

Dinner Time Tuesday 4/9


I've been kind of MIA.  I just wasn't feeling the blogging thing this weekend.  AND since I wasn't, I didn't get anything planned for Monday.  So before I share Dinner Time Tuesday, I have to tell you about how we semi-sort of failed at our new diet plan.

Last week, I shared our weekly plan on Menu Planning Monday with Elizabeth & Jane.  The Insanity program gives you meals you can incorporate to eat 5 times a day.  For starters, even though the meals are small (P.S. I also totally failed at taking and posting pictures of the meals to Instagram.  I captured a few, though), we often weren't able to eat all five.  For me, this just has to do with my work schedule.  I can't just stop teaching to go down the hall and warm up Meal 2 or 4.  To me, the more sensible idea here is that I have three main, small meals with actual snacks (i.e. a piece of fruit, some raw veggies, etc.).  We also didn't get everything made when we cooked on Sunday.  This is due to the fact that we spent hours in the kitchen and had barely gotten through Tuesday.  We also kind of jumped all over the place with the menu, and we often didn't eat the scheduled items on the planned days.  There were also a lot of things I didn't like.  :-/  I am nowhere NEAR as picky as I was when I was a kid.  But it was incredibly difficult to force myself to eat fruits and veggies that I don't like. 

Here's what I DID like, though: Whole wheat bagel w/ cream cheese, protein pizza muffin, steak with broccoli (I cheated and had a small baked potato here.  I just CAN'T eat steak without some kind of potato), cereal bowl w/ banana (I LOVE this Kashi Go Lean cereal we got!), Turkey BLT, Peanut Butter 1/2 sandwich w/ banana, pasta w/ seafood marinara, Berry Protein Smoothie, chicken meatballs, whole wheat pasta w/ mixed veggies & feta cheese, turkey burger, and chicken stir fry. 

That sounds like a lot, but if you look back at how much food was on that list, you'll find that it isn't.  BUT also, don't forget there's a lot we didn't even try.

SO now that I've summed that up for you, here's what's for Dinner this Tuesday:



This is a porkchop with corn and mashed potatoes (of course).  Scott put some olive oil in a frying pan and added some garlic & onion powder, salt & pepper, and basil.  Then he fried both sides for about 5 minutes.  It was SO good.  :)  I don't think I've ever liked a porkchop that wasn't baked with Shake 'n' Bake.  So this was a big step for me.  haha

Dinner Time Tuesday 3/26: BBQ Chicken

Today's dinner was Barbeque Chicken Legs with corn and mashed potatoes.
 
 
Here's how I made the chicken:
 
1. Preheat the oven to 400*. 
2. Place chicken in a 9 x 13" baking dish. 
3. Drizzle with olive oil, and sprinkle with salt and pepper.
4. Bake at 400* for 30 minutes.
5. Turn heat down to 375*.
6. Take chicken out and brush both sides with the BBQ Sauce of your choice.
7.  Cook for 15 minutes.
8.  Take chicken out again, and brush both sides with BBQ Sauce.
9.  Put back in the oven for another 10 minutes.

Corn & Crab Quesadillas

I was looking through the recipes that I posted on my WordPress blog, and when I saw this one, I thought I'd share them today!  I need your input!

Corn & Crab Quesadillas
  • 1 pkg. (8 oz) cream cheese, softened
  • 1 bag (11-12 oz) whole-kernel corn, thawed*
  • 1/2 c. chopped fresh cilantro
  • 1/2 c. sliced green onions (about 5 medium)
  • 1 jar (2 oz.) diced pimientos, drained
  • 1/2 tsp. pepper
  • 1/4 tsp. cayenne pepper
  • 1 lb (approx) crab meat
  • 2 T butter or margarine, melted
  • 6 tortillas
*For the record, I did not think far enough in advance to thaw the corn. I threw it in a mesh strainer and sprayed it with hot water. In the words of Pioneer Woman, "Don't be like me."\

1. In a medium bowl, mix cream cheese, corn, cilantro, onions, pimientos, pepper, and red pepper.

2. Fold in crabmeat. (I used two 6 oz cans of crabmeat. Not quite 1 lb, but it was sufficient.)


3. Spread 2/3 c. of the mixture on each tortilla.

 Yes, I actually measured the 2/3 cup...and assembled these on top of the tortilla packaging. Don't judge.

4. Fold tortilla in half and press together lightly.

5. Brush butter on both sides of the tortillas.
 
6. Cook over medium-high heat until light brown. Turn over and repeat on the other side.

7. Serve with a garnish of sour cream and cilantro, if desired. (I didn't.)
    The verdict?
    Mixed reviews.  Scott didn't like it. I was unsure. There was a flavor that I was unsure of. I think it might have been the cilantro. I've never had cilantro or used it in my cooking before, so I think that may have been the taste I was unsure of. HOWEVER, I liked it enough to keep trying. I ate one and a half of the ones I made for dinner. I took the remaining half to work the next day. It was pretty good reheated (and I had a side of tortilla chips and salsa). I actually took another one to work yesterday, too. The more I eat, the more I like it. (This made 6 quesadillas, by the way.)
    You may be wondering why I chose to share a recipe that I or we didn't necessarily love. To me, that makes this blog more "real." I'm not perfect, and I don't claim to be the best cook. My point is to share my experience with making things, make it known when I make changes, and let you know how it went. If it didn't work, I want you to know that just as much as if I loved something. I also welcome comments for suggestions to make things better or if it seems like there was something I did that might have caused my lack of success. It's about honesty, folks!
    Again, the more I ate, the more I liked, so feel free to try and share your thoughts!
    I think I'll try them again without the cilantro.  What do you think?
